My latest craft project





I have been spending some of this cold snowy winter crocheting some afghans for friends.
You can tell by how old my pattern looks that I have used it a lot over the years.
Someday I need to sit down and type it out before I can no longer read it. Its getting close to that point now.
I don't follow the pattern exactly all the time. I adapt it to my colors and what I feel like doing to it at the time.

Comfort Food Made Over


I had a friend over for dinner and decided I needed a little comfort food.
So, I decided on Sheppard's Pie, or hamburger pie.
Even with my surgery I can have things like this in moderation.

1 lb ground turkey breast or extra lean ground sirloin
diced onion
1 can green beans
tomato sauce
Tablespoon minced garlic
Package instant roasted garlic mashed potatoes
Fat free cheddar cheese
salt and pepper to taste

Saute diced onion in skillet sprayed with Pam. I used an iron skillet so that I only dirtied one pan. Add your turkey or ground sirloin and brown, add a can of drained green beans a tablespoon of minced garlic and a small can of tomato sauce.
salt and pepper to taste and heat through.
Prepare the instant potatoes according to package directions. Spread over the top of your meat mixture and sprinkle with cheddar cheese. Bake in a 400 degree preheated oven until cheese is melted and bubbly.

I could not eat very much, but it was sure comforting to know that I can still have normal foods once in a while. Plus, I have leftovers for a couple of days. I will freeze in individual containers and just heat and eat!
