Parmesan Sage Pork Chops

Too hot for the grill so I came up with this recipe.  It was a hit!


Ingredients:
1/4 cup and 2 tablespoons all-purpose flour
3/4 teaspoon salt
1/2 teaspoon pepper
2-1/4 cups seasoned bread crumbs
1-1/2 cups grated Parmesan cheese
1 tablespoon and 1-1/2 teaspoons rubbed sage
1-1/2 teaspoons grated lemon peel
3 egg, lightly beaten
6 bone-in pork loin chops
3 tablespoons olive or vegetable oil

Preheat oven to 350
In a shallow dish, combine the flour, salt and pepper
the bread crumbs, Parmesan cheese, sage and lemon peel.
Place egg in shallow bowl. dip pork chops in egg,
then coat with bread crumb mixture. Let stand for about 5 minutes or so
In a skillet, place oil and let it heat up, then brown chops in oil until browned on both sides. Place a rack on top of a baking sheet, transfer pork chops onto the rack after frying.
Bake on rack for 30 minutes or until juices run clear. This keeps crust crunchier than it would if you laid them in oil in baking pan.


Recipe can be cut down or increased as needed per portion sizes.
